Frosty Pumpkin Ice Cream Pie


9 inch graham cracker crust:
1-1/2 cups graham cracker crumbs (22 grams)
½ cup of melted butter
¼ cup sugar
Filling:
1 cup of cooked or canned mashed pumpkin
½ cup brown sugar
½ tsp. salt
½ tsp. cinnamon
½ tsp. ginger
1 quart of Vanilla ice cream
1/3 cup of chopped nuts

To prepare crust: Combine cracker crumbs with melted butter and sugar. Reserve ¾ cup of this mixture for topping. Press remaining crumb mixture firmly into a buttered 9 inch pie plate. Chill 45 minutes before filling.

To prepare filling: mix together the pumpkin, brown sugar, salt and spices. Stir in ice cream to soften; then fold into pumpkin mixture. Pour into prepared crust. Combine reserved crumbs and chopped nuts; and sprinkle mixture over pie filling and freeze until needed.


• I had used a pumpkin pie spice instead of cinnamon and ginger.
• I just guessed at the measurement for the pumpkin spice.
• Enjoy!!! This is really good.

Oh, it does sound VERRRY good. :P

Have you ever tried it with sweet potato? My mom uses both for pies.

no I havent tried sweet potatoe but it would work too. Actually any squash would that is yellow orange.

Also when I was growing up my grandma used squash instead of pumpkin for her pies there is no difference in the taste.

My goodness, that frosty pumpkin pie sounds great! I also make pumpkin pie smoothies, using canned or fresh pumpkin, with cinnamon and sugar.

I just made pumpkin ice cream the other day I bet I could use that in this! Oh your going to make me gain my weight back that I lost!! Oh well its for pumpkin and I love anything pumpkin!

My parents grew up in Georgia so I have been fed lots of old-fashioned southern meals. I think sweet potatoes make a sweeter pie. I like both. Just never tried anything like this with the ice cream in it - sounds yummy.
