  5. Potato Pancakes

######!!! I love potato pancakes....but I gotta tell you.....these are even BETTER!! I don't know if you guys have tried this but believe me you should. They are Cottage Cheese pancakes and basically you just subsitute the cottage cheese for the potato. You cut out the carbs and you add protein. I suggest that you add a little cheddar cheese and sour cream to the top. Pure heaven is all I have to say. Oh and the freeze fantasticlly well for an easy snack that you pop into the microwave. YUMMMMMMMMMMMMMMMY!!! Here's the recipe These taste remarkably like old fashioned potato pancakes... they are delicious served with a little reduced fat sour cream and no sugar applesauce, just like the original. 1/2 medium onion, chopped 1 tablespoon butter 1 egg 1/2 cup cottage cheese 2 tablespoons flour salt pepper Saute the onion in the butter until golden and set aside. In a small bowl, beat egg slightly, blend in cottage cheese, flour, salt and pepper, and onion butter mixture. Heat nonstick skillet over medium high heat, spray with Pam, and spread four 1/4 cup scoops of batter into small pancakes. Cook until surface appears slightly firm and undersides are golden brown... flip and cook until lightly brown on other side. ENJOY!
  6. Need Travel Tips

Hi Beth~ I go to Disneyland several time's a year and yes they have the Guest Assistance pass. I use it everytime I go. Go right to guest services as soon as you enter the park. They can't by law ask you for any documentation of your disability. I alway bring it with me just in case. Just like EZ62 says you go in through the exit and you hardly have to wait at all. I would seriously look into the motorized scooter for your vacation. There will be a lot of walking and that will tire you out very quickly. You can make this a very positive trip for everyone if you use the tools to make it happen. holiday time is the BEST time of the year to go. It's amazing and your family is going to love it. Keep us posted as to how your trip went. Have a fantastic time! :D
  7. I Fall Down, Go Boom

Hi There~ I'm sorry to hear about your bumps, lumps and bruises. My family calls me Grace for the simple fact that I fall all the time. It's so weird, but I can totally relate to what your feeling. Try to take it easy and make sure you ice your bumps and just take it easy for a few. Ohhhhh and don't forget the motrin. It works wonders.
  8. Hair Loss

Hi~ I've been noticing the same thing. I turned 40 this year and thought it was more age related. I never made the connection. I use to have very thick hair as a child and now it's very thin compared to how it use to be. Everytime I was my hair to get a wad that I have to thow away than then there's even more when I brush it. There is hair all over my floor. I like many of you, just recently cut my hair shoulder length. I like it, just wish it was thicker, fuller and had shine.
  9. Shots Anyone?

Hi Sam~ I really think you should push for an MRI. This will finally tell you and the dr's what's going on with your neck and arm. My thoughts are with you.
  10. I Cant Take It Any Longer

Hi Sam~ I have had a similar problem a few years back. Mine turned out to be a pinched nerve. My primary care physician had me go to a Physical Therapist. It actually worked wonders. I would recommend going back to your primary care physician and insisting that you get a MRI done. You have been suffering much too long. Good luck to you!
  11. Good News/bad News

Hi Lisa~ I'm not really sure what any of that means but I just wanted you to know that my thoughts are with you.....Your not alone, we're all here for you!

  13. Puffy Hand Season?

This is my MAIN complaint. I have this happening on both my hands. I can't make a fist with either hand and my knuckles are really dry and bright red. My fingers feel really fat. The tightening is all over the back of my hands up to my wrists. The skin is really dark looking also. Mine seems to be getting worst as the days go by.
  14. Lvmyshay, How Are You?

  15. Excellent Support System

This is truly a fantastic site and I don't know how low and scared I would have been at this time if I hadn't found this group of caring "friends". Thank you everyone!
  16. Newbie looking for input

Hi Krist~ Welcome to the forum. I am really glad that you made it to the rheumatologist and that things are starting to make a little more sense. I like you are new to this site and still have not been diagnosed as having Sclero yet, but I'm pretty sure I do. You will find that the people here are so warm, understanding an incredibly helpful. It's so hard when non of your family and friends can relate to what's going on. Again, I welcome you with a big warm hug! :D
  17. Hard Boiled Eggs

I use the Martha Stewart recipe also and it works like a charm. But the real trick is to get under that little membrane, if you don't then it's all over. I've always wondered if how fresh the egg is has something to do with it as well.
  18. Endoscopy

I wanted to give you some pats too. You've be just fine. They'll take really good care of you. I promise Ü
  19. Circulation

The top portion of my thumb is numb ALL the time. I brought this up to my rheumatologist and he made a note of it and checked it out with this pokey wheel thing at my last appt. I think it's all related. <_<
  20. Rheumy Appointment Thursday

Hi Tammy~ I glad to see that your so prepard for your visit. Ask lots of questions don't hold anything back even if you think it's silly. Make sure that your dr's gives you all the time that you need to understand what's going on with you. If you don't understand what he's saying ask him to tell you in words that you can understand. I was stuck with a rheumatologist for 4 years who kept in the dark as to what was going on with me and I just recently went for a 2nd opinion and ###### did this new Dr make the world of difference. You need to have a really good repoir with your Dr. Good luck and I hope everything goes really well at your visit! ;)
  21. Had A Splinter In My Knuckle

Quick, put some neosporin on it before it flares into something nasty. It's terrible that we have to be so careful with the littles things. My dermo just gave me this great rx lotion. It's called Biafine. She told me to use it everytime I get any kind of cut on my hands. She gave it to me to heal my digital ulcer that I've had on the tip of my middle finger for over a year. I am happy to say, it's working! This is the only thing that has EVER worked. I'll keep you posted if it completely goes away. :D
  22. I decorate outside with scarecrows and bales of hay for fall and other holiday decorations. I try to do the inside as well like put out festive towels, candles, nicknac's around the house. I'm excited about the fall being here. I am looking forward to using the fireplace again, eventhough I HATE the cold weather outside. BURRRRR!
  23. My New Dr.

Hi Everyone~ I haven't been on lately, so I just catching up on what's been going on. I wanted to check in and let you know that I went for a 2nd opinion last week. MY OH MY, what a difference he made. I learned more from this one visit than I have in the past 4 years. My other dr kept me so in the dark :( needless to say, I won't be going back to her. He checked me from head to toe asked me all sorts of questions. He took as long as "I" wanted. He answered all my ?'s in terms that I could understand. He ordered all sorts of test. I haven't a clue what they are, you guys might. ANA profile CCP Alpolase CPK ANCA RF-3 IGA, IGG RF-3IGM He's also having my hands, feet and legs X-Rayed for Calcium deposit...(I think is what he called it) He also gave me a new prescription for Colchicine. He said it would help with the tightening of the skin on the back of my hands. (Has anyone heard of this medicine?) The skin on the back of my hands is sooooo tight that I can't snap my fingers, touch my thumb and little finger together. My knuckles are really dry and super red. You can barely see the bumps from my knuckles anymore. I try to stretch the skin on my hands just to give me more flexability. Does anyone have any idea's for me to try to make this more comfortable. I'm almost to the point of not being able to hold a pen and write and it's very difficult for me to open bottles with twist tops. I read a little while back that people with Sclero have problems swallowing. Ever since I read that and my dr asked if I was having a problems swollowing, I swear I am beginning to wonder if I am. What (I think) am experiencing is like post nasel drip at the back of my throat. Is the beginning of having swallowing problems or am I just freaking myself out? He also checked my organs and said from what he can tell I don't have any organ involvement that he can see. I just feel so much better knowing that I am in much better hands. I go back on Oct. 26. I'll keep you all posted on what they find out. Oh, one more thing...is there anything testing wise that I should have done that he might have over looked? Thanks for your help! ;)
  24. Telangiectasia/laser Treatment

I'm sorry Jen that it didn't work for you. I really was hoping that you'd be seeing better results from the laser. I'll keep my finger's crossed for your last treatment.
  25. Am I A Wimp

Hi Jaxs~ You are no way a WIMP! You're going thru enough without having to deal with that. I would call my doctor back and let him know that something needs to be prescribed. Hang in there!
