janey
Jeannie, Thanks for the feedback!!!!!! What a great idea to stuff chicken breasts with it! I love it! Thanks so much for checking out the site and giving my recipes a try. It's always good to get feedback in any shape or form, but positive feedback is awesome! :woohoo:
janey
Here one of my favorite salads! It's quite refreshing in hot weather. Mango Jicama Salad. Don't let the jicama scare you off. You can always substitute cucumber. I have to go to the Mexican market to find jicama, and it's well worth it. I love that little root vegetable!
Sheryl
Janey you can have the Jicama. I have bought it and tried it on a couple occasions. It brought back memories of being in my Grandparents musty dirt floored cellar. It tasted to much like the dirt I tasted when it was thrown in the air when I was a kid. I am happy to find someone who likes that. Ha!
janey
I know that with scleroderma you may have a problem with eating chile peppers, but for some reason, they don't really bother me. I am more affected by citrus fruits and acidic foods - oranges, grapefruit, fresh tomatoes, kiwi and the like. It's actually a good thing that I can eat chile because in New Mexico, chile is HUGE! One of New Mexico's biggest crops is the New Mexico chile pepper. September is a huge month for chile because that's when the crop is peaking so you can find chiles and chile roasters everywhere. So to celebrated this wonderful ingredient, I ran a New Mexico Chile Series. The series explains the question "Red or Green?" and provide several recipes for red or green or both. Check it out and ENJOY!
Shelley Ensz
Thank you, Janey. I love chile's! And they don't cause me heartburn, either. I have more reflux issues with things like donuts. There is some sort of combination of sugar/fat/flour that is the worst heartburn trigger for me, even in gluten-free versions. I don't understand it and I seriously doubt that my doctor believes it -- but I have to be cautious or else I really have to pay the piper. Your recipes, instructions and photos are delightful. And I never knew that honey could cut down the burn on chiles. What a great tip!
janey
Thanks Shelley! Like you - I'm not bothered by hot and spicy either. Thanks goodness!!!! My heartburn is primary caused by citrus like orange and pineapple. Definitely can't drink the juice! A pretty cool thing to know about honey isn't it? It works every time. Thanks for the nice comments!
