Black Bean Salsa

1 15 ounce can black beans

1 8 3/4 can whole kernel corn, drained

4 green onions, sliced

1/3 cup chopped sweet red pepper

3 Tablesppon snipped fresh cilantro

2 Tablespoon lime juice

1 tsp. cumin

1/8 tsp. salt

 

 

1. rinsed and drain beans. In a medium bowl, combine beans corns, green onion, sweet pepper and cilantro. In a small stir together lime juice and cumin and salt. Pour over bean mixture and toss gently to coat.

2. If desired, cover and chill up to 3 days stiring occassionally. Serve salsa with corn chips or baked tortilla chips.

cumin and salt are not listed in your ingredients - how much? This one sounds really good. I always sub parsley for cilantro (called coriander over here) as more than the tiniest amount tastes 'soapy' to me.

Thank you Sam,

 

I have been wanting a recipe for this for a long time. It's hard to get my kids to eat their vegetables but they love salsa. (go figure)

 

Anyway before someone asked for this, I was getting ready to just experiment on my own. I never would have come up with the lime, cumin and salt on my own.

 

Thanks for saving me a lot of mistakes.
