Pineapple Casserole

Hi all,

 

I've been going through my recipes since it's almost Thanksgiving, and thought I'd share this one with you. It might sound kind of strange, but my kids absolutely love it. Goes great with turkey dinner.

 

Pineapple Casserole

 

1-20oz. can pineapple chunks

1/2c. sugar

3 Tbs. flour

1 c. shredded Cheddar cheese

1/4 c. melted butter

1/2 c. buttery cracker crumbs

 

Drain pineapple, reserving 3 Tbs. juice. Combine sugar and flour. Stir in reserved pineapple juice, add cheese and pineapple chunks, mixing well. Spoon mixture into a 1 quart casserole. Combine melted butter and cracker crumbs, stirring well. Sprinkle over pineapple mixture. Bake at 350 for 20-30 minutes or until the cracker crumbs are lightly browned.

 

 

Of course, I usually double or triple this recipe.

 

My kids don't even wait for me to serve this one, I have to chase them out of the pan everytime.

Venessa, it sounds yummy. I am going to try this when we go to Travis' for Thanksgiving. It reminded me of the little pineapple pies my grandfather use to bring to me when I was very little. The crust was like eating moist crackers. This could be a variation of some sort. I am excited. I'll let you know how the kids liked it. Sheryl
