truman Posted November 11, 2007 Share Posted November 11, 2007 When I need to snuggle with food, one of the many that come to mind is potato pancakes. Ingredients: 2 Large Baking Potatoes 1 Medium Onion Diced 1 Large Egg 3-4 Tbsp. Flour Salt and Pepper Peel and grate potatoes. In a food processor, puree potatoes with the onion. Add the egg, flour, salt and pepper and pulse to mix. If mixture is a little loose, add a little more flour at a time. Heat a fry pan with 1/4 inch of oil on medium/high heat. When hot, ladle potato mixture in pan (pancake style). Fry to a golden brown on both sides and drain on paper towels. Sprinkle with a little salt while pancakes are still hot. Serve with tons of sour cream, or as my father used to love, applesauce. Quote Link to post Share on other sites

I'm gonna have him make them when he comes out for the Holidays. Wouldn't it be fun to open a little restaurant that serves nothing but comfort food like grandma used to make? Some things on the menu would be: Porcupines Strawberry Pie mashed potatoes and gravy - of course! peach cobbler fried chicken pot roast tuna casserole breaded pork tenderloin mock turtle soup corned beef and cabbage meatloaf pulled pork sandwiches and of course potato pancakes! They would snuggle in bed under the covers or nestle on the couch waiting for it's delivery :P . To this day, a stranger could ask them what a "boo-boo belly" supper is and they'll tell you grilled cheese and chicken noodle soup. Wouldn't it be great if all we needed for a remedy was a "boo-boo belly" supper to make it all better? :D Quote Link to post Share on other sites

I don't know if you guys have tried this but believe me you should. They are Cottage Cheese pancakes and basically you just subsitute the cottage cheese for the potato. You cut out the carbs and you add protein. I suggest that you add a little cheddar cheese and sour cream to the top. Pure heaven is all I have to say. Oh and the freeze fantasticlly well for an easy snack that you pop into the microwave. YUMMMMMMMMMMMMMMMY!!! Here's the recipe These taste remarkably like old fashioned potato pancakes... they are delicious served with a little reduced fat sour cream and no sugar applesauce, just like the original. 1/2 medium onion, chopped 1 tablespoon butter 1 egg 1/2 cup cottage cheese 2 tablespoons flour salt pepper Saute the onion in the butter until golden and set aside. In a small bowl, beat egg slightly, blend in cottage cheese, flour, salt and pepper, and onion butter mixture. Heat nonstick skillet over medium high heat, spray with Pam, and spread four 1/4 cup scoops of batter into small pancakes. Cook until surface appears slightly firm and undersides are golden brown... flip and cook until lightly brown on other side. ENJOY! Quote Link to post Share on other sites

You guys have some interesting dishes, eg Grits, huge, steaming biscuits, black-eyed peas and cornbread, gumbo, strawberry pie, please tell me how you makes all these.
